Come tutte le vellutate anche questa si distingue per la sua semplicità, occhio soltanto a scegliere i prodotti di qualità.
Ingredienti:
4 zucchine medie
1 porro
2 patate
1 abbondante ciuffo di basilico
400ml di acqua/ brodo vegetale
Procedimento:
Lavare accuratamente le zucchine ed asciugarle.
Tritare il porro e lasciarlo cuocere a fuoco basso con un pò d’olio in una capiente pentola, aggiungere le patate sbucciate e tagliate a tocchetti.
Tagliare a rondelle sottili le zucchine e unirle alle altre verdure.
Dopo aver preparato il brodo vegetale unirlo alle verdure e lasciarle cuocere per circa 15 minuti, aggiustando di sale.
Aggiungere il basilico, la quantità dipende anche dai vostri gusti, comunque non lesinate!!
Quando le verdure saranno morbide frullarle con il minipimer, e lasciarlo cuocere a fuoco lento per circa 5-7 minuti.
Servire non troppo calda, con un filo d’olio d’oliva a crudo ed una fogliolina di basilico.
