E poi non diciamo che l’inverno non ha i suoi lati positivi….riscaldarsi sorseggiando un bel ponce, magari dopo un lauto pasto, non ha prezzo.
Chi abita a Livorno, o nei dintorni, sa di cosa parlo, ma, anche se può sembrare strano, basta allontanarsi di alcune decine di km e già diventa difficile trovare il vero ponce alla livornese.
Facciamo bene attenzione si scrive e si legge PONCE, niente a che vedere con il punch che si può trovare nelle altre regioni.
La bevanda, generalmente, viene consumata dopo i pasti, in alternativa al caffé, anche se un bel “poncino” è gradito anche a metà pomeriggio, giusto per temprarci un po’ lo spirito!!
La tradizione vuole che il ponce sia nato a Livorno intorno al 1700 quando nella città portuale era forte la comunità britannica che era abituata a bere un punch composto da acqua, zucchero, acquavite, limone e cannella.
5 ingredienti da qui il termine punch.
I livornesi sostituirono l’acqua con il caffé, e l’acquavite con il rhum, o per dirla alla labronica rumme.
Il rumme è diventato nel corso degli anni una vera e propria bevanda unica, la cui ricetta originale è stata creata dalla ditta Vittori di Livorno. E’ una miscela composta da alcol, caramello scuro, zucchero ed essenza di rum, chiamata anche rumme fantasia.
Oggi la ricetta è stata registrata a marchio DOC dalla delegazione livornese dell’Accademia, e i 5 ingredienti sono:
Zucchero
Limone
Rum
Caffé
mastice o cannella
Le dosi dipendono molto dalla maestria di chi ve lo prepara!!!
Come dicevo prima il rumme fantasia del Vittori è comunemente usato come base per la preparazione del ponce, e può essere unito al rum da correzione, oppure al sassolino (detto mezzo e mezzo).
Un passaggio fondamentale nella preparazione del ponce, oltre al tipico bicchiere in vetro, è riscaldare per bene l’alcol tanto da fare sciogliere completamente lo zucchero.
Non ci dimentichiamo un ottimo caffé ristretto per concludere l’opera.
Non è una esagerazione, si tratta proprio di un’ opera d’arte, dove ognuno è geloso della propria ricetta e si guarderà bene dal confidarvela!
I consumatori seriali di ponce alla livornese diventano sempre più esigenti, e basta un particolare (poca schiuma del caffe, poco o troppo limone, troppo dolce o troppo amaro….) a farli esplodere in improperi o ergere a dottori esperti del vero ponce.
Credetemi, se dopo una cena o un pranzo godereccio, o semplicemente entrate dentro un bar con la voglia di un bel ponce, e questo non è come vi aspettate vi gireranno di molto le scatole!!!
