A tranci, surgelato o fresco, il merluzzo con la sua carne soda si presta bene per questa ricetta.
Se volete potete sostituire la zucca con un’alta verdura dolciastra come la carota.
Ingredienti:
2 tranci di merluzzo
4 scalogni
300g di zucca
2 patate
olio
sale
pepe
Procedimento:
Tagliare in 4 pezzi il pesce, insaporirlo con sale e pepe.
In una padella lasciar soffriggere lo scalogno con un pò d’olio, unire la dadolata di zucca e patate, sfumare con del vino bianco; cuocere finchè le verdure non iniziano ad ammorbidirsi, regolare di sale.
Adagiare il pesce sopra dei rettangoli di carta alluminio, versarvi sopra le verdure, aggiungere dell’olio d ‘oliva, ed infine chiudere il cartoccio.
Accendere il forno a 180°-200° lasciar cuocere per circa 20 minuti, gli ultimi 2 aprire il cartoccio per far dorare le verdure.
Servire direttamente il cartoccio nel piatto.
